I have self hosted docker instance. In the web ui I see it keeps data for 1000 days. I want to keep it forever, there is enough space. Does it actually delete old records?

Only the historical data of current, voltage, power and aberration are time-limited. The rest have no limit.

so these are limited? If so, can I push the limit higher or remove it?
